If you are looking for the perfect side dish then your search is over. Sweet potato brussel sprout hash is healthy, simple and delicious plus it pairs well with a variety of dishes. I thought I didn’t like brussel sprouts all growing up and well into my adult years. That was until a friend made this exact dish for friendsgiving.
The brussel sprout hash makes a great side dish with dinner but I also love making it for breakfast. Simply add 2-3 eggs into the skillet with the vegetables.
Another bonus with this recipe is that you can easily switch around the ingredients to use what you have on hand. Use bacon bits instead of fresh bacon, add more or less potatoes if needed. You can switch out the type of nuts you use or leave them out completely. If you are vegetarian or vegan then leave the bacon out too.
The options really are endless to customize this dish to your dietary needs and restrictions.

Ingredients for Brussel Sprout Hash
- 1 package of Brussel Sprouts
- 3 Sweet Potatoes
- 2 Small Potatoes
- 1 Medium Onion
- 1/2 C Bacon, crumbled (optional)
- 1/2 C Walnuts or Pecans (optional)
- 3 Tbs Butter or Oil
- Salt and Pepper, to taste
What you need to Make Sweet Potato Brussel Sprout Hash
To make this recipe I recommend using a cast iron skillet although if you don’t have one that is ok. A pepper grinder for fresh ground pepper offers more flavor to the dish.
Other than that all you should need is a standard cookie sheet, a spatula or wooden spoon and knives to cut everything up with.
Instructions
- Preheat the oven to 450 degrees fahrenheit. While the oven is preheating, cut up the brussel sprouts into quarters and cube the sweet potatoes and regular potatoes. Place everything on a baking sheet and bake for 20 minutes or until the vegetables are soft.
- In a skillet, melt the 2 Tbs of butter or heat the oil. Then add the chopped onion and saute until the onion is soft.
- Once the vegetables from the oven are all soft add them into the skillet with the onion. Stir in the bacon and the nuts, season with salt and pepper to taste and cook for an additional 5 minutes.
