Mayo Chicken – Simple Chicken Recipe

This mayo chicken is melt in your mouth good. But before we get to the recipe let me ask you a question. How many days in a row can you eat the same thing before you get sick of it? For me, it’s like two days max. I just like a little bit of variety, even if its just switching between two meals.

My husband, Robin, on the other hand could go forever on rice and chicken. In fact before we got married I’m convinced that is all he ate everyday, lunch and dinner.

So now whenever I ask for suggestions or input on what we should have for dinner I always get the answer: chicken and rice. I’ve had to get creative and find new ways to make chicken delicious and unique so that it isn’t too monotonous. This recipe for mayo chicken, as we call it, has become a staple. It is simple, I always have the ingredients on hand, and the chicken stays moist and doesn’t dry out. Talk about great chicken!

Ingredients

  • 3 Chicken Breasts, thawed
  • 1/2 C Mayo
  • 1/2 C Parmasean Cheese
  • 1/3 C Bread Crumbs (I use Panko with italian seasoning)

Mayo Chicken Instructions

Time needed: 50 minutes

  1. Prep the Chicken

    Pre-heat the oven to 365 F. Take the thawed chicken and pat it dry with a paper towel. Then cut of any fat or undesirable pieces. Get out a baking sheet (or pan) and line it with aluminum foil.

  2. Make the Coating

    In a medium sized bowl mix together the mayo and the parmesean cheese. Then take the chicken and one at a time completely coat each breast with the mayonnaise mixture. Then place them on the baking sheet.

  3. Add Bread Crumbs

    Now I like to just eyeball the bread crumb amount and pour right out of the container. You’re just going to sprinkle bread crumbs across the tops of the chicken. Creating a nice even layer that will add great flavor.

  4. Baking

    Finally place the baking sheet into the oven and bake for 40 minutes or until each chicken breast is cooked all the way through and the bread crumb topping has turned a dark golden brown.

    Serve with vegetables.

Mayo Chicken

We like to eat this chicken with vegetables and other sides. If you’re looking for a great side to go with the mayo chicken these homemade buffalo chips (basically thin sliced french fries) would go great with them! I also have a yummy dessert called strawberry poke cake that is light and delicious. Be sure to give them a try or pin them to Pinterest for later.
