Cheesy Chicken Taquitos

Yummy!!! These cheesy chicken taquitos are a healthier alternative to buying the store packaged taquitos and it tastes so much better. It is a crockpot meal too so you can just throw this together in the morning, let it cook all day, and then eat it at night. That is why I love crockpot meals. And this one was a winner for our family.

Cheesy Chicken Taquito Ingredients:

  • 2 Chicken Breasts
  • 8 oz. Cream Cheese (softened)
  • 1 tsp Chili Powder
  • 1 tsp Garlic Powder
  • Salt and Pepper to taste
  • 1 tsp Cumin
  • 1/3 C Water
  • 12 small corn or flour tortillas (or big tortillas torn in half)
  • 1 ½ C Shredded Cheese

Cheesy Chicken Taquitos

Instructions:

Mix the chili powder, garlic, cumin, salt, pepper, cream cheese, and water.

Pour half of the mixture into the crockpot, add the chicken then pour in the rest of the mixture on top of the chicken. Then add the 1/3 C of water**.

Cover and cook on low for 8 hours or high for 4 hours. Then shred the chicken and cook for 15 additional minutes.

Pre-heat the oven to 400 F. Put about ¼ c of the chicken mixture into each tortilla along with some cheese. Roll up the tortilla tightly and place in a single layer on a lightly greased baking sheet.

Bake for 10 minutes or until slightly browned, sprinkle with more cheese is desired and serve while warm!

**Warning: If you don’t defrost the chicken before cooking then do not add in the additional 1/3 C of water and if the mixture comes out too watery then drain out as much of the excess water before putting it into the tortillas.
