Sweet Potato Casserole with Pecan Topping – Ruth’s Chris Copycat

This sweet potato casserole with pecan topping is a Ruth’s Chris Copycat and is surprisingly easy to make! I received this recipe a couple years ago from my aunt after she brought this casserole to Thanksgiving dinner. 

We normally had the sweet potato dish with chunks of sweet potato with marshmallows on top. That was my only experience with sweet potatoes growing up and I thought I hated them. Later I found sweet potato fries and boy was my mind changed. This dish will change your mind too.

The sweet potato filling is creamy, sweet and delicious. The pecan topping is crunchy and rich which perfectly matches the filling.

This sweet and delicious casserole is fall favorite recipe in our family. A perfect thanksgiving side dish that is filling and disappears every year. The creamy sweet potato base is delicious and the pecan topping adds the perfect amount of crunch. As an added bonus this ruth's chris copycat sweet potato casserole  can be made ahead of time. Make ahead sides are a great way to save time on thanksgiving so you can focus on family, football and turkey.

Ruth’s Chris Casserole Ingredients

  • 3-4 Sweet Potatoes
  • 3/4 C Sugar
  • 1/2 teaspoon Salt
  • 1 teaspoon Vanilla
  • 2 Eggs

Pecan Topping

  • 3/4 C Brown Sugar
  • 1/3 C Flour
  • 1 C Chopped Pecans
  • 4 Tbs Butter

Sweet Potato Casserole Instructions

Time needed: 1 hour and 10 minutes

  1. Cook the Sweet Potatoes

    I like to cook the sweet potatoes in a pressure cooker. Put one cup of water in the bottom then put in the steamer rack. Poke holes in each potato with a fork then place the sweet potatoes in a pressure cooker. Cook on high for 20 minutes. Once they are done cooking, let them cool then remove the skin.

    You can also bake, boil or microwave the sweet potatoes. Whatever your preference.

  2. Make the Sweet Potato Filling

    Preheat the oven to 350 F. Then in a large bowl mash up the sweet potatoes then stir in the sugar, salt, vanilla, and eggs. Mix thoroughly until it is all combined.

  3. Prepare the Casserole

    Next, pour the sweet potato filling into a buttered, oven safe baking dish. Then sprinkle the pecan topping evenly across the top.

  4. Bake the Sweet Potato Casserole

    Bake at 350 F for 30 minutes total. The center should be warm and the edges may be bubbling slightly.

  5. Make the Pecan Topping

    While the sweet potato filling starts baking make the pecan topping. In a microwave safe, medium size bowl melt the 4 Tbs butter. Then stir in the brown sugar, flour, and crushed pecans. Mix thoroughly then take your baking dish out of the oven and spread the topping evenly across the top. Put the dish back in the oven and let it finish baking for the remaining time.

I use a square 9×9 pan or an oval baking dish. You can also double the recipe and put it in a 9×13 dish.

Make Ahead Sweet Potatoes

You can make this dish ahead of time if you need to as well. It will stay fresh for up to two days in the refrigerator. Simply make the filling and store it in an airtight container in the fridge. Don’t add the topping until just before baking and make sure you add 15-20 minutes to the baking time if it is going into the oven straight from the fridge.
