Copycat Cheesecake Factory Avocado Egg Rolls With Cashew Sauce

Have you ever had The Cheesecake Factory’s avocado egg rolls?? If not, you need to ASAP. They are heavenly and I have the Cheesecake Factory copycat recipe for you right here! My husband’s favorite food is avocados, so when our friends told us about these delicacies we had to try them. Now they’re a staple every time we go to The Cheesecake Factory.

We liked them so much I started making a copycat Cheesecake Factory avocado egg rolls recipe from home.

I’m not going to try and make these fancier than they are: this is guacamole in a fried up shell. When I first made them I kept thinking, wow I could have made guac from these ingredients. The sauce is what really makes this appetizer, it is sweet and chock full of cilantro and just perfect for the egg rolls.

This is another not so quick food but it’s a fun one to make for a date or special occasion. I hope you enjoy! (Or you can go to The Cheesecake Factory to try the real thing).

P.S. The sauce makes more than enough sauce for 3 egg rolls. It would probably work for 12 egg rolls or more. So if you double the recipe you don’t need to double the sauce.

Avocado Egg Roll Ingredients: (makes 3 egg rolls)

  • 1 large Avocado
  • 2 Tbsp. Tomatoes, chopped
  • 1 Tbsp. Red Onion, diced
  • ½ tsp fresh Cilantro, chopped
  • Salt
  • Egg Roll Wrappers
  • 1 Egg, beaten
  • Vegetable Oil

Instructions:

Peel and dice the avocado then combine gently with the tomato, salt, red onion and cilantro.

Spoon 1/3 of the filling onto the egg roll wrapper then roll it up and brush the beaten egg over the edges to seal it. Repeat with the other egg rolls.

Heat the oil. (Tip: to know if the oil is warm run your fingertips under some water then flick the water onto the oil. If the water bubbles or pops then the oil is warm). When the oil is hot place the wrapped egg rolls into the oil and let them fry until their golden brown and crunchy!

Cashew Sauce Ingredients:

  • ¾ C Cashews, Chopped
  • 2/3 C Cilantro
  • 2 Cloves Garlic
  • 2 Green Onions
  • ½ Tbsp. Sugar
  • 1 tsp Pepper
  • 1 tsp Cumin
  • 4 tsp White Vinegar
  • 1 tsp Balsamic Vinegar
  • ½ tsp Jam
  • 1/3 C Honey
  • ¼ C Olive Oil

Instructions:

Combine all the dry ingredients in a food processor and blend in short bursts to a powder.

In a separate bowl combine the wet ingredients EXCEPT the olive oil. Heat the mixture in the microwave for one minute. Mix it well, then add to the dry ingredients in the blender.

Blend it all together in short bursts until smooth.

Add in the olive oil and refrigerate for 30 minutes.
