Rainbow Cupcakes

Cupcakes are an awesome chance to make personalized little cakes. There are so many fun choices to choose from! One day I’ll have to write up a post on the cookie monster cupcakes I made – they were SOO cute! So when I saw a picture of these rainbow cupcakes on Pinterest, well I just had to make them. And let me tell you they are just as cute and amazing in person as they look in the pictures.

I just use box cake mix’s. I’m sure I could make a cake from scratch but cake mix’s are delicious AND easy. So make your choice of cake from scratch or just buy a simple cake  mix. Make the cupcakes and let them cool completely.

Buttercream Frosting

I use this frosting recipe that I got from my mom. It is a real winner. She uses it on her wedding cakes and it is 1000000x better than any store bought frosting I’ve ever had in my life. We get compliments on it every time. So, give it a try and I know you’ll love it too.

Ingredients:

  • 1/3 C Butter
  • 2 C Powdered Sugar
  • 1/2 tsp Vanilla
  • 1/2 tsp Almond Flavor
  • 1-2 Tbs Milk

Instructions:

  1. Beat the butter for several minutes until creamy.
  2. Add the sugar, about 1/2 cup at a time beating well each time.
  3. Add the vanilla then the milk and beat well again. The longer you mix the frosting the fluffier it will be. (Add the almond flavor if you want or leave it out if you like the flavor better without it).

Tip: The more milk you add the softer the frosting. Firm frosting is better for decorating with frosting tips but softer frosting is better for spreading of cake and cookies.

Now it is time to put together these amazing cupcakes.

  1. Spread the white buttercream frosting over the top of the cupcakes. I used one of my wilson frosting tips in a zigzag pattern across the top.
  2. Then take the Airheads Xtremes Rainbow Candy and cut it into 3rds. Put one piece of the candy on each cupcake pressing the end firmly into the frosting.
  3. Now take an unwrapped Rolo and put a dob of frosting on the wider end.
  4. Then press that dab of frosting into the gold sprinkles and then place your “pot of gold” at one end of the rainbow.
