I have always loved Hawaiian haystacks. They are delicious and creamy and perfectly customizable. While looking up topping ideas I read that they don’t actually come from Hawaii, which is disappointing lol. So even though it isn’t super culturally diverse I am ready do dig in.
Plus Hawaiian haystacks are GREAT for feeding a crowd and this recipe could be easily made in a crockpot if you didn’t want to make it on the stove.

Ingredients
- 1 Boneless Chicken Breast (cooked and shredded)
- 1 Chicken Bullion Cube
- 2 Cans Cream of Chicken
- 1/2 Can Water (This affects thickness, if you like a thicker sauce use less water, if you like a thinner sauce use more.)
- 1/2 Medium Onion (chopped)
- 2 Garlic Cloves
- 3 Tbs Sour Cream
- 2 Tbs Butter
- Salt to Taste
- Pepper to Taste
Instructions
Time needed: 35 minutes
- Sauté the Onions
Take a large sauce pan and melt the butter. Once it is melted add in the onions and garlic and sauté them until the onions begin turning clear.
- Add the Sauce
Once the onions have been sautéed add in the cream of chicken, chicken bullion, water and the shredded chicken. Mix it well and heat through until it starts boiling.
If you are cooking this in a crockpot, add all the above mentioned ingredients to the pot and cook on low for six hours. In the crockpot I recommend using uncooked chicken and shredding it after the six hours are done. - Finishing Touches
Finally, add in the sour cream and the salt and pepper. This is all to taste but is necessary because it adds a lot of flavor. Let it simmer for 5-10 minutes.
Serve over rice and cover with the toppings of your choice from the list below!
Hawaiian Haystacks Toppings List
This is simply a list of every topping I could think of (or was recommended by you on Instagram!). On mine I personally love: cheese, sliced almonds, chow mien noodles, celery, and bacon bits. But everyone is a little different so having a variety of toppings is good. You DO NOT need all of the toppings listed below however so choose wisely.
- Chow Mein Noodles
- Bacon Bits
- Green Onions (chopped)
- Sliced Almonds
- Celery (chopped)
- Tomatoes (diced)
- Shredded Pineapple (fresh or canned)
- Shredded Cheddar Cheese
- Canned Peas
- Olives
- Grated Carrots
- Coconut Flakes
- Red Bell Peppers (chopped)
- Green Bell Peppers (chopped)
- Mandarin Oranges (canned)
- Peanuts
- Cashews
- Sunflower Seeds
- Cucumbers
- Bananas
- Broccoli
- Tabasco Sauce
- Black Beans
- Avocado
- Mushrooms
- Jalapenos (chopped)

Thank you so much! Saw your recipe posted on a HCLF discussion. Loved it- big bowl of healthy food and the sauce made it so satisfying- kind of want to add some spice to the sauce to mix it up for leftovers- what would you suggest?
I am so glad you’ve enjoyed it! I am not a big one for spicy but I think a chopped jalapeño would pari great or I could honestly see my husband putting hot sauce on top lol. Otherwise maybe just try pairing it with new toppings. Good Luck!
