The perfect comfort food dinner is this delicious tater tot casserole. And the extra great news is it freezes well so you can double and freeze or make to ahead like I did.
I typed this up last summer right after I travelled back to Kansas City, MO, where I grew up, to visit my family during my sisters high school graduation. Robin, my husband, had work so he stayed home. He works really long hours during the summer and I wanted to help him out dinner wise while I was gone so I cooked up this easy, delicious tater tot casserole.
This way he could just warm up some of the tater tot casserole each night rather than having to cook every single night. It will make dinner prep more like 5 minutes instead of 30-40 minutes, which makes a huge difference when you don’t get home until 9:15 pm at the EARLIEST.
Side Note about Kansas City:
Kansas City is one city that is split in half by the Kansas/ Missouri State line. The Missouri side is the fun side with the Power and Light District and home to the Kansas City Royals. I grew up about 20 minutes outside of Kansas City in a small town called Raymore. There is nothing to do there BUT there are fun things to do in Kansas City here are my favorite 4 things, all of which are kid friendly.
- EAT MISSOURI BBQ! There are two restaurants that are a must try:
- Kansas City Joe’s (formerly Oklahoma Joe’s) It was started in the back of a gas station in Missouri and is SO FREAKING GOOD! My favorite thing to order here is the ribs.
- Jack Stacks Barbecue. This is a slightly more expensive place to eat but it is so good! You have to try the appetizer of BBQ wings!
2. Go to Worlds of Fun.
- Worlds of Fun is a local amusement park that has a ton of good rides. I loved going every summer as a kid. If you’re in town around Halloween time they turn several sections of the park into Haunted Houses and that is a blast too.
3. Go to a Royals Game.
- The Royals are the best and the atmosphere at a Royal’s game will never let you down.

Tater Tot Casserole
This meal is so family friendly it is ridiculous! My mom made it for my siblings and I growing up and we loved it. It will please even the pickiest eater as long as they like tater tots. Plus there are only 6 ingredients, 4 of which you simply mix together in a bowl! It has a long cook time but even then it’s just sitting in the oven so you are free to do other things. Are you convinced this is a great meal yet? GOOD!
Lets get cookin’ then.
Ingredients:
- 1 lb Ground Beef
- 1 can Cream of Chicken
- 1/2 C Sour Cream
- 1 can Cream of Mushroom
- Shredded Cheese to taste
- 1 bag Tater Tots
Instructions:
- Pre-heat the oven to 375 degrees Fahrenheit.
- Brown the ground beef in a skillet and drain off any excess fat.
- Mix together the first 4 ingredients (ground beef, cream of chicken, cream of musheroom, and sour cream).
- Spread this mixture evenly across the bottom of a baking dish or 9×13 pan.
- Top with an even layer of shredded cheese.
- Top with the frozen tater tots as evenly as possible.
- Cover with aluminum foil and bake in the oven for 1 hour.
