If you need a light summer meal or a delicious side this pizza pasta salad is a great crowd pleaser. I made it up one day to bring to my aunts house using only items we had on hand. Every ingredient, except mozzarella is something we keep on hand all the time. And if needed you can leave the mozzarella out and it will still taste great.
We started off calling this pasta salad gucci paste, my husbands choice, but you’re free to call it that too if you like it better. Pizza pasta salad is a better representation of what you’re getting when you make it though!
Robin and I eat this as dinner a lot. It is delicious and with a side of broccoli is plenty to fill us up. I hope you love it as much as we do.
Ingredients
- 1 Box of Pasta
- 1-2 Tbs Olive Oil (or Avocado Oil)
- 1 tsp Lime Juice (or to taste)
- 1/2 tsp Italian Seasoning (or Oregano, Parsley, and Garlic powder)
- 3/4 C Parmesan Cheese
- Pepperoni Slices to taste
- Mozzarella Cheese to taste

Time needed: 30 minutes
- Boil the Noodles
Start by cooking up a whole box of noodles. I like using bowties or rotini noodles. Once the noodles are done, drain them and place them in a large bowl.
- Coat in Oil
Now drizzle a small amount of oil on the noodles and stir until they’re all lightly coated.
- Mix it All Together
Now add in the lime juice, italian seasoning, and parmesan cheese stirring between each ingredient.
- Add the Toppings
Next stir in your choice of topping ingredients. I use quartered pepperoni slices and mozzarella cheese but you could also add in olives, mushrooms, etc to your liking.
