Panera Copycat: Cheddar Broccoli Soup

I absolutely LOVE Panera’s Cheddar Broccoli Soup and when I splurge and ruin my diet I have it in a bread bowl, which is to die for! So this copycat recipe is a little time consuming but so worth it in the end.

Now I can have the soup whenever I want, which is good because the nearest Panera restaurant to Provo is not close at all. It goes really well with my French bread recipe which I often shape into bread bowls too and it works amazingly well.

So like I said this isn’t a quick and easy recipe that is going to be made and over with in less than an hour. BUT it is a great recipe if you want to try something exciting and I would definitely recommend it as a stay at home date night idea. You could make dinner together and play games or watch a show while you wait for it to simmer.  Whatever reason you choose to make this cheddar broccoli soup, I hope you enjoy it was much as I do.

Copycat Panera Broccoli Cheddar Soup

Ingredients:

  • ½ Onion, chopped
  • ÂĽ C Melted Butter
  • ÂĽ C Flour
  • 2 C Half and Half
  • 2 C Chicken Stock
  • ÂĽ tsp Nutmeg
  • 2 Large broccoli bunches
  • 2 Carrots, shredded
  • 8 oz. Shredded sharp cheddar cheese
  • Salt and Pepper to taste

Instructions:

Shred the carrots into small strips and break apart the broccoli florets into small pieces.

In a pan sauté onions with 1 tsp of butter until fragrant, then add in the remainder of butter and the flour. Cook for about 5 mins over medium.

In the pot add half and half, stirring constantly, add chicken stock and let simmer for 20 minutes.

Add the carrots, broccoli and onions and cook for 25 minutes on low.

Blend half of the soup in a blender and return to heat.

Add in the cheese and nutmeg and stir until the cheese is melted. Serve immediately while warm. Best enjoyed with fresh bread or in bread bowls!
