Healthy Pumpkin Muffins with Applesauce

Fall is coming up which means the pumpkin craze is about to start and I am here. For. It! I love pumpkin and I have a lot of pumpkin puree to use up from last fall because I turned all of our decorative pumpkins into pumpkin puree.

So let’s turn some of this pumpkin puree into chocolate chip pumpkin muffins! These are healthy pumpkin muffins made with applesauce and no sugar. But if you don’t have apple sauce and you want to use sugar then you simply switch out the applesauce for sugar on a 1:1 ratio. So one cup of sugar = one cup of applesauce.

I know the term sugar free pumpkin muffins may turn some people away but I promise you can’t tell the difference between the muffins with sugar and the sugar free applesauce muffins. And remember they are only sugar free if you leave out the chocolate chips.

These are sugar free pumpkin muffins that still taste delicious. My husband wanted healthy pumpkin muffins with applesauce instead of sugar and I found a way to make it work. These are yummy pumpkin muffins that aren't completely unhealthy.

Equipment

Healthy Pumpkin Muffins Ingredients

  • 15 oz Pumpkin Puree
  • 4 Eggs
  • 2 C Applesauce
  • Âľ C Vegetable Oil
  • 3 C Flour
  • 2 teaspoons Baking Soda
  • ½ teaspoon Salt
  • 1 ½ teaspoons Ground Cinnamon
  • ½ teaspoon Ground Ginger
  • ÂĽ teaspoon Ground Cloves
  • ½ teaspoon Ground Nutmeg
  • Optional: 1 C Chocolate Chips, withhold ÂĽ cup

Sugar Free Pumpkin Muffins Instructions

  1. Prep the oven by preheating it to 350 degrees Fahrenheit. Also prep the muffin tin by placing the paper liners in each muffin slot.
  2. In a medium bowl mix together the pumpkin puree, eggs, applesauce, and vegetable oil until smooth.
  3. Next mix in the flour, baking soda, salt and spices and stir until just combined. Don’t overwork it.
  4. Now scoop â…“ cup of the muffin mixture into each muffin slot.
  5. Bake in the oven for 20 minutes or until the toothpick comes out clean with no crumbs.
  6. Take the muffins out of the tin and let them cool on a cooling rack before storing.

Chocolate Chip Pumpkin Muffins Instructions

  1. If you are making chocolate chip pumpkin muffins follow steps 1-3 above first.
  2. Next add in Âľ cup of chocolate chips and stir them in.
  3. Now scoop ÂĽ cup of the muffin mixture into each muffin slot. Then top the muffins with the remaining ÂĽ cup of chocolate chips.
  4. Bake in the oven for 20 minutes or until the toothpick comes out clean with no crumbs.
  5. Take the muffins out of the muffin tin and let them cool on a cooling rack before storing.

Healthy Pumpkin Muffins with Applesauce

My favorite way to eat these healthy pumpkin muffins with applesauce is cut in half, warmed up for about 10-15 seconds in the microwave and a little butter spread on each half. YUM! The chocolate chip version I like to each plain but you could do the same thing.
