This spicy southern chip dip is easy, delicious and only requires a handful of everyday fresh ingredients. A good chip dip is the key to any great party or really even a great snack.
I got this corn dip recipe from my Aunt Christina. Although I did replace her seasoning from a spicy ranch dip seasoning packet to just Cajun seasoning.
I could NEVER find the right seasoning packet at the store so seasoning it myself was so much simpler. Plus, added benefit is that I know exactly what is going into my food.
This is a (relatively) healthy snack dip that you just serve up with chips of your choice. I love Costco’s tortilla chips but any tortilla chip will do. It is great for a warm summer day or a family BBQ and it is not too spicy. I don’t love overly spicy foods and I can eat this easily.

Ingredients:
- 1 Red or Orange Pepper
- 2 Jalapeños
- I Can of Corn, drained
- 16 oz Cream Cheese
- 1 Tbsp. Cajun Spice or to taste.

Time needed: 30 minutes
- Soften the Cream Cheese
You can either leave the cream cheese out for an hour first to allow it to reach room temperature. Another option if you forget to do this is to microwave the cream cheese for 15-30 seconds.
- Chop Things Up
First up is to de-seed and finely chop both the red pepper and the two jalapeños.
- Mix the Ingredients
Now mix all the ingredients together in a medium size bowl. Then serve with chips and enjoy!
