My husband and I just moved from Provo, UT to Sacramento, CA and we are having a blast! It’s always fun going to a new place where you can experience lots of new things. Sacramento is really a great central location in NorCal because everything is within driving distance but your not in the crazy hustle and bustle of San Francisco. We can drive to Santa Cruz and a few other beaches, San Fransisco, South Lake Tahoe, and Yosemite. Those are all within a two to three hours drive time. There are also lots of fun things to do like hike, float rivers and go to the dog park that are closer to home. So when we moved I brought all the food from our pantry with us but we have significantly less storage space in our new apartment. We needed to use us our extra food so that there was room to store everything. So while looking into recipes that would use what we had on hand I found a recipe similar to this poke cake, with a few modifications I made it work without going to the store!
Strawberries and Bananas, Oh My.
Alright now I chose to make this using strawberry and banana jello that I had on hand but you can choose any flavor of jello. Since that was the jello flavor it is also what I decided to use as toppings for the cake. You could use just about any fruit though and it would still taste super good. Ingredients:
- 1 Box White Cake Mix
- 3 eggs
- 1/2 C Vegetable Oil
- 1 C Water
- Strawberry and Banana Jello Packet
- 1 C boiling water
- 1 Container of Whipped Cream
- Fruit Topping’s
Instructions:
- First bake the cake according to the directions on the box. I recommend using a 9×13 pan. (I LOVE my Pyrex pan) When it is done, let it cool for about 10 minutes.
- While the cake bakes boil 1 cup of water, then remove it from the heat and mix in the package of jello. Let this cool slightly before pouring it onto the cake.
- Once the cake is cooled take a butter knife and poke holes in the cake. You are going to want the holes fairly evenly spaced and not touching. The more holes the better the jello flavoring will be dispersed throughout the cake.
- Now pour the jello mixture over the cake making sure to cover the entire surface. When you’re don’t it should look like this:
- Put the cake in the fridge and let it chill for 1-2 hours or until you’re ready to serve.
- Cover the cake evenly with the whipped cream and top with the fruit of your choice. The first time I made this I topped it with strawberries and bananas. The second time I only had strawberries and it still tasted great!!

Refreshing Summer Poke Cake!
